Dean Rong-Hong Hsieh of College of Nutrition Receives the 2025 Taiwan Open Education Excellence Award
(School Category – Honorable Mention) for Introduction to Nutrition and Food Safety
Professor Rong-Hong Hsieh, Dean of the College of Nutrition, has been honored with the 2025 Taiwan Open Education Excellence Award in the category of “Application of Open Educational Digital Teaching Resources” (School Category – Honorable Mention). The award ceremony was held on November 15, 2025, at Taipei World Trade Center Hall 1, where he received formal recognition.
Dean Hsieh was recognized for his meticulously designed cross-university, cross-platform integrated course, Introduction to Nutrition and Food Safety, which was unanimously praised by the review committee for its innovation. The course thoughtfully incorporates four MOOCs jointly developed by Taipei Medical University and Tzu Chi University in the fields of nutrition and food safety. These include Eating for Longevity 2.0 and Eat with Confidence on the Ewant platform, as well as Modern Conan: Investigating Food Safety and Decoding Food Energy on the Ministry of Education’s MOOC platform. Since their launch, these four courses have attracted nearly 17,000 enrollments. The achievement not only highlights the fruitful outcomes of inter-university collaboration and cross-platform resource integration, but also reflects society’s growing emphasis on food safety and nutritional literacy.

The course Introduction to Nutrition and Food Safety spans multiple disciplines, including nutrition science, food safety, toxicology, and biochemistry, thereby strengthening students’ interdisciplinary integration capabilities. It is also closely aligned with the United Nations Sustainable Development Goals (SDGs), particularly SDG 3 (Good Health and Well-Being) and SDG 4 (Quality Education). The course fully embodies the spirit of Open Educational Resources (OER) by making high-quality learning materials accessible to a broader audience, enabling free sharing and widespread application of educational resources.
The College of Nutrition has long been committed to advancing digital teaching and open education initiatives. This prestigious recognition not only affirms Dean Rong-Hong Hsieh’s excellence in innovative teaching, but also symbolizes the University’s continued breakthroughs and commitment to quality in educational innovation. Moving forward, the College will continue to develop high-quality OER courses to further deepen University Social Responsibility (USR), with the aim of contributing lasting impact to health education and lifelong learning in Taiwan.
